Habanero, Rum, and Molasses Pulled Pork Sandwiches
Ingredients:
- 4 lbs pork shoulder, shredded
- 1 cup dark rum
- 2 habanero peppers, minced
- 1 cup molasses
- 1/2 cup apple cider vinegar
- 1/4 cup Dijon mustard
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Salt and black pepper to taste
- 8 hamburger buns
- Coleslaw for topping
Instructions:
Put chopped habanero peppers, shredded pork, and rum in a large bowl
For better flavor, let it sit for at least two hours or overnight
Add smoked paprika, ground cumin, salt, black pepper, minced garlic, Dijon mustard, and molasses to a saucepan set over medium-low heat
Bring it to a simmer and stir it every now and then
Let it cook for 10 to 15 minutes, until it gets thick and sauce-like
Set your smoker or grill to medium-high heat
When the pork is ready, take it out of the bowl and put it on the grill
It should be cooked for 15 to 20 minutes, or until the edges are golden and crispy
After the pork is cooked, put it in a big bowl and use two forks to shred it
Add the molasses sauce to the shredded pork and mix it all around
On the grill, toast the buns for one minute, or until they turn golden brown
Put a lot of the habanero, rum, and molasses pulled pork on the bottom half of each bun before putting the sandwiches together
Put coleslaw on top and then put the other half of the bun on top of that
