Gluten-Free Sourdough Pancakes with Caramelized Apples

Enjoy a fresh take on traditional sourdough pancakes made without gluten, topped with sweet and fragrant caramelized apples. These pancakes are delicious for breakfast even if you cant eat gluten because they are light, fluffy, and full of flavor.

Ingredients:

  • 1 cup gluten-free sourdough starter
  • 1/2 cup gluten-free flour blend
  • 1/4 cup almond flour
  • 2 tablespoons sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil
  • 2 apples, peeled, cored, and sliced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • Maple syrup for serving
  • Fresh berries for garnish optional

Instructions:

In a mixing bowl, combine the gluten-free sourdough starter, gluten-free flour blend, almond flour, sugar, baking soda, and salt

In another bowl, whisk the egg, almond milk, vanilla extract, and melted coconut oil together

Pour the wet ingredients into the dry ingredients and stir until well combined

Preheat a non-stick skillet or griddle over medium-high heat and lightly grease it with oil or cooking spray

Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides

Repeat for the remaining batter

While the pancakes are cooking, prepare the caramelized apples

In a separate pan, melt the butter over medium heat

Add the sliced apples, brown sugar, and ground cinnamon

Cook, stirring occasionally, until the apples are tender and caramelized, about 5-7 minutes

Serve the gluten-free sourdough pancakes topped with caramelized apples, drizzle with maple syrup, and garnish with fresh berries if desired
