Mexican Cauliflower
A mix of fragrant spices gives this cauliflower dish with Mexican flavors a lot of flavor. It tastes great and is a healthy low-carb alternative to regular Mexican rice. You can eat it as a side dish or by itself as a light meal.
Ingredients:
- 1 medium head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions:
Get the oven ready by heating it up to 400F 200C
Sprinkle the cauliflower florets with salt, pepper, chili powder, cumin, paprika, garlic powder, onion powder, and olive oil in a large bowl
Toss the florets until they are evenly covered
Place the cauliflower in a single layer on a baking sheet that has been lined with parchment paper
Put the cauliflower in an oven that has already been heated and roast it for 20 to 25 minutes, stirring it every so often, until it is soft and lightly browned
Take it out of the oven and put it on a dish to serve
Pour lime juice over the food and sprinkle chopped cilantro on top
