Sweet Potato Chocolate Cake

Ingredients:
- 2 cups mashed sweet potatoes
- 1/2 cup almond milk
- 1/2 cup maple syrup
- 1/3 cup melted coconut oil
- 2 teaspoons vanilla extract
- 1 1/2 cups oat flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dairy-free chocolate chips
Instructions:
Preheat the oven to 350F 175C
In a large bowl, mix the mashed sweet potatoes, almond milk, maple syrup, coconut oil, and vanilla extract
Add the oat flour, cocoa powder, baking soda, baking powder, and salt
Mix until well combined
Fold in the chocolate chips
Pour the batter into a greased 9-inch 23 cm round cake pan
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Allow the cake to cool before slicing and serving
