Pea Edamame Chilli Coconut Soup
A delicious and creamy vegan soup with the vibrant flavors of peas, edamame, chili, and coconut. Perfect for a quick and nutritious meal.
Ingredients:
- 1 cup frozen peas
- 1 cup frozen edamame
- 1 red chili, finely chopped
- 1 can coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Dice the onion, mince the garlic, and grate the ginger
Cook the onions until they become clear
Put in edamame, frozen peas, and chopped red chili
Bring it to a boil
Add the vegetable broth and coconut milk
Turn the heat down to low and let it cook for another 15 to 20 minutes
Add pepper and salt to taste
Blend the soup until its smooth with an immersion blender
Serve hot with fresh cilantro on top
