Paleo Chicken Breakfast Casserole
Ingredients:
- 2 cups diced cooked chicken
- 1 sweet potato, peeled and diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cups baby spinach
- 8 large eggs
- 1/4 cup almond milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Coconut oil for greasing
Instructions:
Preheat your oven to 375F 190C
In a large skillet, heat some coconut oil over medium heat
Add the sweet potato, red bell pepper, and onion to the skillet
Saut until they start to soften, about 5 minutes
Add the diced chicken and baby spinach to the skillet
Saut until the spinach wilts and the chicken is heated through
In a separate bowl, whisk together the eggs, almond milk, garlic powder, onion powder, paprika, salt, and pepper
Grease a baking dish with coconut oil
Spread the sauted ingredients evenly in the dish
Pour the egg mixture over the ingredients in the baking dish, ensuring everything is evenly coated
Bake in the preheated oven for about 25-30 minutes or until the casserole is set and the top is lightly golden
Remove from the oven and let it cool slightly before serving
Slice into portions and enjoy your Paleo Chicken Breakfast Casserole
