Keto Chocolate Cupcakes
Ingredients:
- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup erythritol or preferred keto-friendly sweetener
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted butter or coconut oil
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips optional
- 1/4 cup chopped walnuts optional
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with liners
In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt
In another bowl, whisk together the eggs, almond milk, melted butter or coconut oil, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until well combined
If desired, fold in sugar-free chocolate chips and chopped walnuts for added texture and flavor
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean
Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
Once cooled, you can frost them with a keto-friendly frosting of your choice or enjoy them plain
