Instant Pot Vegan Lo Mein
A quick and tasty vegan lo mein that is easy to make in the Instant Pot. Its a great low-calorie meal with only 6 Weight Watchers Freestyle Points because its full of colorful vegetables and a tasty sauce.
Ingredients:
- 8 oz whole wheat spaghetti
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup shredded carrots
- 1 cup snap peas
- 1/2 cup low-sodium soy sauce
- 1/4 cup rice vinegar
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tbsp cornstarch
- 2 tbsp water
- 2 green onions, sliced
- 1 tbsp sesame seeds optional
Instructions:
Break spaghetti in half and place it in the Instant Pot
Add broccoli, bell peppers, carrots, and snap peas on top of the spaghetti
In a bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sesame oil, ginger, and garlic
Pour the mixture over the vegetables and spaghetti
Add vegetable broth to the Instant Pot
Close the lid and set the Instant Pot to Manual/Pressure Cook for 3 minutes on high pressure
Once the cooking is complete, perform a quick release of pressure
In a small bowl, mix cornstarch with water to create a slurry
Stir the slurry into the Instant Pot to thicken the sauce
Sprinkle green onions and sesame seeds on top
Serve the Instant Pot Vegan Lo Mein hot and enjoy
