Italian Subs With Sausage and Peppers
Ingredients:
- 4 Italian sausage links sweet or hot
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1 large bell pepper red or green, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 4 sub rolls, split
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped for garnish
Instructions:
Preheat the oven to 375F 190C
In a skillet over medium heat, cook the Italian sausage links until browned on all sides
Remove from the skillet and let them rest before slicing
In the same skillet, add olive oil, sliced onions, and bell peppers
Cook until vegetables are softened
Add minced garlic, dried oregano, dried basil, salt, and black pepper
Stir to combine
Slice the cooked Italian sausage links and add them back to the skillet with the vegetables
Cook for an additional 2-3 minutes until everything is heated through
Place the split sub rolls on a baking sheet
Spoon the sausage and pepper mixture onto each roll
Top each sub with marinara sauce and shredded mozzarella cheese
Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly
Garnish with chopped fresh parsley before serving
