Cauliflower Rice Seafood Paella
This low-carb take on traditional paella will take you to Spain in a bowl. Since cauliflower rice is made instead of grains, it is keto-friendly and still full of seafood goodness.
Ingredients:
- 1 small cauliflower, grated into rice-like grains
- 200g mixed seafood shrimp, squid, mussels
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tomato, grated
- 1/4 cup extra virgin olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 1/2 cup vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Warm up the olive oil in a big pan over medium-low heat
Put in the bell pepper, onion, and garlic
Saut until the meat is soft
Add the saffron, grated tomato, and smoked paprika, and mix them in
Cook until the tomato is almost gone
Add the cauliflower rice and mix it in well
Bring it to a boil
Move the cauliflower rice to the sides of the pan and put the seafood in the middle
After 3 to 4 minutes, the seafood should be fully cooked
Add vegetable broth to the seafood and cauliflower rice
Use a stir to mix
Add pepper and salt to taste
Add two to three more minutes of cooking
Add chopped parsley as a garnish before serving
