Brown Butter Almond Madeleines are delicate, nutty French treats that are easy to make and delicious to eat. Brown butters rich flavor, combined with aromatic almond extract, creates a delectable indulgence.

Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • Sliced almonds, for garnish optional

Instructions:

Preheat the oven to 350F 175C and grease a madeleine pan with butter or non-stick spray

In a small saucepan, melt the butter over medium heat

Continue to cook, swirling the pan occasionally, until the butter turns a golden brown color and has a nutty aroma

Remove from heat and let it cool slightly

In a mixing bowl, whisk together almond flour, all-purpose flour, baking powder, and salt

In a separate bowl, whisk eggs and granulated sugar until well combined and slightly frothy

Add the vanilla extract and almond extract to the egg mixture and mix well

Gently fold the dry ingredients into the wet ingredients until just combined

Gradually pour the brown butter into the batter while continuously mixing until fully incorporated

Cover the bowl with plastic wrap and refrigerate the batter for about 30 minutes to allow it to firm up

After chilling, spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full

If desired, sprinkle a few sliced almonds on top of each madeleine for added texture and flavor

Bake in the preheated oven for 10-12 minutes, or until the madeleines are golden around the edges and spring back when lightly pressed

Remove from the oven and let the madeleines cool in the pan for a few minutes before transferring them to a wire rack to cool completely

Dust with powdered sugar before serving, if desired
