Vegan Baked Nutmeg Donuts with Berry Icing

These vegan baked nutmeg donuts are a delightful treat, perfect for any occasion. They are soft, moist, and bursting with warm nutmeg flavor. Topped with a vibrant berry icing made from fresh mixed berries, these donuts are not only delicious but also beautiful and colorful. Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened almond milk
  • 1/4 cup vegan butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • 1 cup mixed berries strawberries, raspberries, blueberries, fresh or frozen
  • 1 cup powdered sugar
  • 1-2 tablespoons lemon juice

Instructions:

Preheat oven to 350F 175C

Grease a donut pan with oil or vegan butter

In a large bowl, whisk together flour, sugar, baking powder, baking soda, nutmeg, and salt

In another bowl, mix almond milk, melted vegan butter, vanilla extract, and apple cider vinegar

Pour wet ingredients into dry ingredients and stir until just combined

Fill each donut cavity about 3/4 full with the batter

Bake for 10-12 minutes, or until donuts spring back when lightly touched

Allow donuts to cool in the pan for a few minutes before transferring to a wire rack to cool completely

Meanwhile, prepare the berry icing by blending mixed berries until smooth

Strain through a fine mesh sieve to remove seeds if desired

In a bowl, whisk together powdered sugar and lemon juice until smooth

Gradually add berry puree until desired consistency is reached

Once the donuts are cooled, dip the tops into the berry icing

Allow the icing to set before serving
