Instant Pot Beans and Rice - Cook with Sharmila

A quick and flavorful Instant Pot recipe for beans and rice, infused with aromatic spices and vegetables. Perfect for a wholesome and satisfying meal.

Ingredients:

  • 1 cup rice
  • 1 cup black beans, soaked overnight
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions:

Set Instant Pot to Saut mode and heat olive oil

Add diced onion, minced garlic, and saut until fragrant

Stir in diced bell pepper, tomato, cumin powder, chili powder, paprika, and oregano

Add soaked black beans, rice, and vegetable broth

Season with salt and pepper

Cancel Saut mode, close the Instant Pot lid, and set to Pressure Cook for 20 minutes

Once cooking is complete, allow natural pressure release for 10 minutes, then manually release remaining pressure

Carefully open the lid, fluff the beans and rice with a fork, and let it sit for a few minutes

Serve hot, garnished with fresh cilantro
