Hearty Cowboy Soup
The tender beef, hearty vegetables, and flavorful broth in this hearty cowboy soup make it a comforting meal. Its great for a cold day or a cozy dinner
Ingredients:
- 1 lb beef stew meat
- 4 cups beef broth
- 1 can diced tomatoes
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 cup corn kernels
- 1 cup cooked beans black beans or kidney beans work well
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions:
Put vegetable oil in a pan and heat it over medium-high heat
Put in the beef stew meat and brown it all over
Put it in the slow cooker
Put the garlic and onions in the pan and saut them until they get soft
Put it in the slow cooker
Put the rest of the ingredients into the slow cooker and mix them together
Turn the heat to low and cook for 6 to 8 hours or on high for 3 to 4 hours, until the meat is soft and the vegetables are done
Before you serve, add salt and pepper to taste
