Almond Flour Banana Pancakes

A great gluten-free breakfast option are these delicious Almond Flour Banana Pancakes. They have a lot of banana flavor and are fluffy.

Ingredients:

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Coconut oil for cooking

Instructions:

Beat eggs and mashed bananas together in a bowl

To the banana mixture, add almond flour, baking soda, cinnamon, and a small amount of salt

Blend thoroughly

A tiny amount of coconut oil is added to a skillet that is heated over medium heat

Transfer the pancake mix onto the skillet to create tiny pancakes

Cook until surface bubbles appear, then turn and continue cooking until golden brown on the other side

Top hot dish with preferred Paleo toppings
