Dessert Fruit Sushi
Ingredients:
- 2 cups sushi rice
- 2 cups water
- 1/4 cup sugar
- 2 tablespoons rice vinegar
- Assorted fruits strawberries, mango, kiwi, etc
- Nori sheets optional
Instructions:
Rinse the sushi rice under cold water until the water runs clear
In a saucepan, combine the rinsed rice and water
Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes
In a small saucepan, mix the sugar and rice vinegar over low heat until the sugar dissolves
Set aside to cool
Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture until well combined
Allow the rice to cool to room temperature
Slice the assorted fruits into thin strips or small cubes
If using nori sheets, cut them into smaller rectangles
Place a sheet of plastic wrap on a clean surface
Lay a nori sheet if using on top, followed by a layer of sushi rice, leaving about 1 inch of space at the top
Arrange the fruit slices or cubes in a line across the rice
Carefully roll the sushi using the plastic wrap, applying gentle pressure to shape it into a cylinder
Once rolled, remove the plastic wrap and slice the sushi into individual pieces using a sharp knife
Repeat with the remaining ingredients
Serve the dessert fruit sushi immediately, and enjoy
